There is such a prevalent American view that its "white, brown, and black." Completely erases the nuances and differences between different communities and ethnicity. Drives me crazy.

I agree. I dont think white, black, yellow, red, brown etc is a real thing. I have never seen an actually white person (expept from albinos), nor have I seen actually yellow or red people. Really black people exist but they seem to be quite rare. So most people also seem to be a shade of brown, from light beige to quite dark.

Either way, I think calling someone yellow, brown, black, or white is limiting.

YES! There are places in the world that don't use this type of terminology at all.
It might be useful some places, and I don't think it's offensive to call someone brown, white, black etc. But why call them that when we can call people African, European, Central Asian, East Asian?

That reminds me that both my parents come from the same ethnic group but they're from different tribes, so my father looks like he's white and my mother is often thought to be mix-raced. It can lead to weird conversations where people will say racist things about them to their face without even realizing it. I won't say more because that would be too specific.

I think these terms come from exaggeration more than anything else.

same. it triggers the fuck out of me. "white" people can genetically be more different from each other than from "black" people. it's also determined that there is no race. this was only a thing to justify slavery, racial segregation and sorts.
