I would start with reading up on the diet section on how calories work. Also, I would start with walking/ swimming, since swimming is very very gentle on the joints. Definetly start lifting, a fullbody workout just for general fitness. Something like Starting Strength is great, focus on form and technique. You will make gains even on a calorie deficit for the first few months.You can develop form by watching youtube videos.

If you categorise in morbid obesity, machine workouts would be the best. Weight limits bodymovements range, so a machine allows to stay within bounds outside of snapcity.
