Ok I have so many favourite recipes I wasn't sure where to start, but heres my go-to cookie with big chunks of chocolate.

Butterface Cookies

175g butter
120g brown sugar
100g sugar
2 eggs, beaten
1tsp vanilla
310g all-purpose flour
1tsp bicarb of soda
350g dark chocolate chips
125g pecans, chopped optional, you can use any nut or add 50g more chocolate if you dont do nuts

>Pre-heat oven to 190c (375f), prepare baking trays

>Cream butter and sugars until fluffy

>Add eggs, beat well
>Stir in vanilla, then add the flour and bicarb and mix until just combined
>Add chocolate chips/nuts

>Drop tablespoons of dough onto tray and bake until lightly golden (about 10 minutes).

MAKES 40

Alles cuisine!

They are nice, but pretty pricey. I only ever make them as a curio dish for guests from abroad. Anglo people are very squeamish about eating frogs. Same with snails. They think it's weird, but I think putting butyric acid (similar to vomit) in american hershey's chocolate is weirder.

All in all, snails and frogs are ok, but I'd rather have oysters if I'm going to be fancy. At least you can get a decent meal out of them.

I wanted to profess my love of this meal, though not the version pictured. Spaghetti + hot dogs can be really good and look like real food if any effort is put into it. A nice, chunky, spicy homemade tomato sauce (takes like 30 mins to make) with chopped up, cooked beef franks (not those weird blended meat weiners) tastes pretty damn great. The hot dogs give it a smokey flavor. They're a few more dollars than pork/chicken weiners but actually taste like human food and look edible.

Weiners are cheap and mysterious, like bologna. Any recipe with them is instantly upgraded by using better quality meat.

My tomato plants have fruited really well this year, what should I make with them?
You guys got any favourite sauces or chutneys?

There's yellow pear, Amish paste, beefsteak and san marzano.

Damn guuurl, that looks juicy.
I think the best way to enjoy home grown tomatoes is in a caprese salad. Maybe tomato soup.
How many kilos did you yield? I have a relish recipe but it requires 5kg of tomaties.

….interested in a garden/harvest thread?

The total yield is probably about 2.5 kgs. The yellow pears are so sweet I think they'll only work in a chutney.

We've been having heaps of salads but since the season is ending soon, I wanna make something I can jar and use over autumn/winter.

Its the first time I've had a real garden so its crazy exciting! Do you do edible gardening as well?

I don't know any chutney recipes sorry.
My garden is pretty shit at the moment, I'm halfway through pulling a bunch of old stuff out and preparing the beds. Ive got a variety of herbs and some red callaloo that just keeps on giving.

wow they look so awesome! If I were you I'd just enjoy them raw, maybe in a salad. Homegrown stuff is so flavoursome on its own

What's your soil like?
Color/texture/composition etc.

It took us nearly a year to get our soil ready for planting and we've gotta wait another season before we can do carrots or parsnips.
I recommend cow and horse manure, season, perlite beads for drainage and turning the soil with good quality compost once a fortnight.

Idk you might know all that already, I just get excited about soil.

I grew up with my grandparents so we always ate from the garden.
After I moved out and before my partner and I got our current house and did our veggie patches, every vegetable I got in a shop was awful to me. I still can't eat shop oranges or lemons.

The yellow tomatoes are so sweet its insane. I have a watering system for improving the flavor of all the tomatoes and it seems to have worked a treat!

I'm cooking daal, pakoras and chapatis all from scratch tomorrow! I precooked a meat curry base today so tomorrow I just have to fling everything together. I haven't cooked in a few weeks because of illness so I'm excited!!

What level of spice does everyone like? My family is black and indian so everything we cook is spicy, unless we specifically cook Italian/English dishes.

It really depends on the dish. I like my food super spicy, while my dude is more normal so I tend ti cook the whole meal (steak, pierogi, soup whatever) not too spiced peppered whatever applies, then put the condiments and spices on the table and add liberal amounts of whatever myself to my own plate.

How do Pyrex trays work? I once had one explode on me because I put it on a steel bench straight out of the oven and it lost heat too quickly, now I'm afraid to preheat my oven when using one.

Someone reassure me it's safe.

What are you favorite cooking channels? I like michael's home cooking though he seems to have a preference for fried foods

Also does anyone have a problem with budgetbytes? The recipes always look so nice on the website but they nearly always look and taste like shit when I make them. I'm about to give them up.

For some reason I can't really stand "serious" cooking shows. But I like Maangchi

As a site Epicurious seems like they have fairly decent recipes. Also, you can always take the Budgetbytes recipes and tweak them so the flavors and process suit your tastes better. Best part about cooking is the creative process imo

Holy shit anon, can't say I've ever had one crack on me much less explode. I usually put them on top of pot holders though. I think you're safe with them but maybe not put them on the steel bench next time?

>>131117
I agree with >>131118 in regards to Budget Bytes. You really have to make your own tweaks to it in order for it to come out really good since they can be sort of bland. I don't think there is one recipe that I followed to the T. Some additional herbs/spices can really make the recipes 10 times better but they're good as a basic platform. What I like best about them is that they're not overly complicated and can usually be made quickly.

Is there anyone around with croissant baking experience? My first batch ever just came out of the oven just pooled in melted butter. I think that maybe the butter was too cold when I rolled out the paton, and so it broke up into lumps, but all recipes seem to say to chill the butter before adding it to the pastry, and to chill the paton 30mn between folds. Leaving it for a few minutes out of the fridge beforehand didn't really help. Maybe I need butter with higher fat content for pliability?

No. 131121

>>131120
You want the butter cold in your dough, that's what makes the pastry flakey. So a couple of things I might recommend is freezing your butter and then grating it so the butter pieces are distributed more evenly, but you still want that butter cold. Also, if you're using a lower quality butter you should spring some money for something a bit better. Finally, you may not be proofing the dough long enough. Yeast can be active while chilled, as long as you haven't killed it, but it will take longer to proof.

No. 131122

>>131121
The rise was still fairly good on the croissants, I left them to prove for 2 hours before I put them in the oven and they'd doubled in size in that time, so I thought that would do it. I agree about springing for a better butter, but grating it is a new idea! Wouldn't that have an effect on how the layers form? If not I'll certainly consider it.

>>131122
I've found that having the butter more evenly dispersed can be great for creating a more uniform honeycomb, unless you like the big pockets that is. But I find that there isn't as much leakage using the grated butter since it laminates it a bit better. Good luck!

bomb ass sandwiches or like poster above me suggested a nice plate of finger foods

or, you could always do both. Maybe that way you have a little of the best of both of those choices.

There's lots of stuff online about how to make really awesome sandwiches. It seems like a simple thing, but the meat, cheese, and condiment will all be important as heck.

So figure out what bf likes as far as flavors and try to search out any good sandwiches based around those if you go with that.

Check out the menu's of sandwich shops and try to recreate those. Or just google mini sandwiches for ideas.
Here's some nice examples:
-brie cheese with honey and nuts
-parmaham, mozarella, rucola, cherry tomatoes and pine nuts (sauce: olive oil or crema di balsamico)
-Tuna, olives, ansjovis, pine nuts
-smoked salmon, onion, garlic sauce (maybe some salad)
-something with guacamole (my friend often uses this but I have no idea what to combine with it)
sorry if my translations didn't work out

Smoked salmon and cream cheese is a personal favourite of mine.
You could also do a sweet flavour, like banana and nutella or strawberries and cream?
Or just do more boring fillings but make them more interesting by using tortillas instead of bread.

Maybe find different ways to cook them first? I don't like many vegetables raw but I love roasted veggies.

I don't normally like chickpeas either but falafels are so yummy. I'm not vegan but I like how creative some vegans can be and the way they use foods. Peaceful Cuisine on YouTube is one of my favorite channels. Beautiful and relaxing videos.

And maybe fit in something simple like a salad here and there. Fruits too!
