Wow something I can actually give information about.
I've been in the restaurant industry since I was 16. I hosted at Applebees and worked my way up. I don't know how old you are and how high end you're thinking but a lot of the top tier places require at minimum five years of experience. I needed five and went through four interviews to get my current serving job. If you’ve never done a service job I suggest starting with hosting to see if you can deal because not everyone can and that’s okay. It really sucks sometimes.
I’m not sure what you mean by "shady" though? It’s a legit job with nothing “shady” if you’re working at a genuine fine dining place. You memorize wines, multiple menus, and you are expected to perform at 200% all the time. I make a lot of money doing it but it’s grueling as it is rewarding. It is high stress and you have to be “on” at all times. I’m not gorgeous by any means, but at some places the hosts are expected to be more done up but server wise it’s more lenient. I don’t know much about club hosting but that’s the gist I can give you on fine dining I guess.
